A refreshing and vibrant salad combining creamy avocados and sweet mangoes, perfect for a light lunch or as a side dish.

Ingredients

  • 2 ripe avocados, diced
  • 2 ripe mangoes, diced
  • 1 bell pepper, chopped (optional)
  • 1/4 red onion, chopped (optional)
  • 1/4 cup fresh cilantro or mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Dice the avocados and mangoes, and chop any additional vegetables or herbs.
  2. Drizzle olive oil and lime juice over the ingredients.
  3. Toss gently to combine, being careful not to squish the avocados.
  4. Serve immediately or chill for a few minutes to meld flavors.

Notes

Best served fresh, store leftovers in an airtight container for 1-2 days. Keep dressing separate if preparing ahead.
