Indulgent baked feta potatoes with creamy, tangy feta and crispy textures, perfect for a comforting meal.

Ingredients

  • 2 pounds Yukon gold or red potatoes
  • 8 ounces feta cheese
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary or thyme (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Coat the potatoes in olive oil, herbs, salt, and pepper.
  3. Arrange the potatoes in a single layer in a baking dish.
  4. Crumble the feta cheese on top of the potatoes.
  5. Bake for 30-40 minutes until golden and tender.
  6. Serve with fresh herbs or a drizzle of olive oil.
