Delightful baked fritters featuring the tangy flavor of rhubarb in a soft, pillowy texture. Perfect for brunch or an afternoon snack.

Ingredients

  • 1 cup rhubarb, diced
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup almond milk (or regular milk)
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine dry ingredients in a bowl: flour, sugar, baking powder, and salt.
  3. Add wet ingredients: almond milk and vanilla extract. Mix until smooth.
