Description

Crispy and spicy Bang Bang Salmon Bites served over a bed of rice with fresh vegetables, perfect for gatherings or a quick dinner.


Ingredients

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat your air fryer.
  2. Season the Salmon: In a bowl, mix the salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Stir to ensure all pieces are coated evenly.
  3. Coat in Breadcrumbs: Place the panko breadcrumbs in a shallow dish. Roll each salmon cube in the breadcrumbs until fully coated. For extra crispiness, you can lightly spray with olive oil.
  4. Bake or Air-Fry: Arrange the coated salmon on a baking sheet or in the air fryer basket. Bake for 12-15 minutes or air-fry for about 8-10 minutes, or until golden brown and crispy.
  5. Make the Bang Bang Sauce: In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, optional honey, and lime juice. Adjust the sriracha to your preferred spice level.
  6. Assemble the Bowls: Serve the salmon bites over cooked jasmine rice or cauliflower rice. Top with shredded purple cabbage, avocado slices, shredded carrots, and green onions. Drizzle with the Bang Bang sauce and garnish with fresh cilantro and sesame seeds.

Notes

Ensure the salmon is cut into even pieces for even cooking. For gluten-free options, use gluten-free breadcrumbs. Adjust sriracha to reduce heat if desired.
