A vibrant and colorful Bow Tie Pasta Salad packed with fresh vegetables and a light dressing, perfect for summer picnics or quick weeknight dinners.

Ingredients

  • 8 oz bow tie pasta
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup parsley or basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the pasta until al dente, then drain and rinse under cold water.
  2. Chop your bell peppers, cucumbers, and cherry tomatoes.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a bowl.
  4. Toss the cooled pasta with the chopped veggies and dressing until well combined.
  5. Chill for at least 20-30 minutes before serving to let the flavors meld.
