A quick and flavorful Chicken Zucchini Stir Fry, perfect for busy weeknights. Juicy chicken and vibrant zucchini come together in a savory sauce for a delightful meal.

Ingredients

  • 2 chicken breasts, sliced
  • 2 medium zucchini, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon canola or sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • Salt and pepper to taste
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Marinate the chicken in soy sauce, garlic, and ginger for at least 10 minutes.
  2. Preheat a skillet over medium-high heat.
  3. Add the marinated chicken and cook until golden brown and cooked through.
  4. Remove the chicken from the skillet.
  5. Sauté the zucchini until just tender.
