A refreshing pasta salad combining the zestiness of lime with fresh cilantro and crisp vegetables, perfect for summer barbecues or as a quick side dish.

Ingredients

  • 8 ounces pasta (gluten-free if desired)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted boiling water for 8-10 minutes until al dente.
  2. Drain the pasta and rinse it under cold water to cool.
  3. Chop the vegetables while the pasta cools.
  4. Mix the lime juice, olive oil, salt, and pepper in a separate bowl for the dressing.
  5. Toss the cooled pasta with the chopped vegetables and dressing until evenly coated.
  6. Adjust seasoning as needed before serving.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For best texture, store dressing separately and mix just before serving.
