Ingredients

  • 8 oz pasta of choice
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 cup heavy cream (or dairy-free alternative)
  • 1 lemon, zested and juiced
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions, reserving some pasta water.
  2. Sauté the asparagus in olive oil until tender.
  3. Combine the cooked pasta and asparagus in the skillet.
  4. Add the cream, lemon juice, and zest, stirring until coated.
  5. Adjust the sauce with reserved pasta water if needed.
  6. Serve garnished with extra lemon zest and Parmesan cheese.

Notes

Leftovers can be stored in an airtight container for up to three days. For best results, reheat gently and add a splash of cream.
