Tender and flavorful beef cooked slowly in the Crockpot, perfect for hearty sandwiches topped with cheese and served with au jus for dipping.

Ingredients

Scale
  • 23 lb beef chuck roast
  • 1 packet au jus seasoning mix
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 68 rolls or baguettes
  • Provolone or Swiss cheese slices (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the beef chuck roast in the Crockpot. Season with salt and pepper.
  2. In a bowl, mix together the au jus seasoning, beef broth, soy sauce, and Worcestershire sauce. Pour the mixture over the roast.
  3. Cover and cook on low for 480-600 minutes or on high for 240-300 minutes until the meat is tender and shreds easily.
  4. Once cooked, remove the roast from the pot and shred the meat.
  5. Return the shredded beef to the broth and stir to combine.
  6. Serve on rolls, topped with cheese if desired.
  7. Strain the broth for au jus and serve it alongside the sandwiches for dipping.

Notes

Store leftover meat in an airtight container in the refrigerator for up to 3-4 days. Reheat gently for best results.
