- 2–3 heads of fresh organic garlic
- 1–2 cups raw, unpasteurized honey
Instructions
- Peel the garlic cloves and slightly crush them to release enzymes. Let sit for 10 minutes.
- Place cloves in a clean glass jar, filling it about 2/3 full.
- Pour raw honey over the garlic until fully submerged, leaving 1 inch of headspace.
- Seal loosely and store in a dark place for 2-4 weeks, burping daily for the first week.
- Flip the jar daily to keep cloves coated.
Notes
Always use raw honey for successful fermentation. If the honey crystallizes, gently warm the jar in a bowl of warm (not hot) water.
