Description

A simple, 2-ingredient medicinal ferment that transforms raw garlic and honey into a powerful immune booster and culinary glaze.


Ingredients

  • 23 heads of fresh organic garlic
  • 12 cups raw, unpasteurized honey

Instructions

  1. Peel the garlic cloves and slightly crush them to release enzymes. Let sit for 10 minutes.
  2. Place cloves in a clean glass jar, filling it about 2/3 full.
  3. Pour raw honey over the garlic until fully submerged, leaving 1 inch of headspace.
  4. Seal loosely and store in a dark place for 2-4 weeks, burping daily for the first week.
  5. Flip the jar daily to keep cloves coated.

Notes

Always use raw honey for successful fermentation. If the honey crystallizes, gently warm the jar in a bowl of warm (not hot) water.
