Juicy chicken bites marinated in maple syrup and sriracha, served with coconut rice and mango avocado salsa.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup maple syrup
  • 2 tbsp sriracha
  • 1 cup coconut rice
  • 1 cup coconut milk
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in maple syrup and sriracha for at least 30 minutes.
  2. Grill the chicken on medium heat until cooked through, about 6-8 minutes.
  3. Cook the coconut rice by simmering rice in coconut milk.
  4. Assemble bowls with coconut rice, grilled chicken, and mango avocado salsa.

Notes

For a tropical twist, swap mango with pineapple. Leftovers can be stored for up to three days in the refrigerator.
