Deliciously charred seafood skewers ideal for summer gatherings or quick weeknight dinners, featuring shrimp, scallops, or firm fish alongside colorful veggies.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 pound firm fish (like salmon), cut into cubes
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (like parsley or basil), chopped
  • Salt and pepper, to taste

Instructions

  1. Combine olive oil, lemon juice, garlic, herbs, salt, and pepper in a bowl to create the marinade.
  2. Add the seafood and vegetables to the marinade, letting them soak for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated seafood and vegetables onto skewers, ensuring not to overcrowd.
  5. Grill the skewers for 3-5 minutes on each side, until cooked through and charred.
  6. Serve immediately, drizzled with a squeeze of lemon if desired.

Notes

Marinate seafood for at least 30 minutes for maximum flavor. Avoid overcrowding skewers for even cooking.
