A vibrant and nutritious salad combining grilled corn, Greek yogurt, and fresh herbs, perfect for summer gatherings.

Ingredients

  • 4 ears of fresh corn, grilled or boiled
  • 1 cup Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon chili powder or cayenne pepper
  • Salt to taste

Instructions

  1. Grill or boil the corn until tender and slightly charred. Let it cool, then cut the kernels off the cob.
  2. Combine the corn with Greek yogurt, cilantro, lime juice, chili powder, and salt in a large bowl.
  3. Mix everything well to ensure the flavors meld beautifully.
  4. Serve the salad in a bowl, garnished with additional cilantro and a sprinkle of chili powder.
