Crispy, warm pineapple fritters that are perfect for brunch or dessert, bringing a tropical delight with every bite.

Ingredients

  • 2 cups fresh pineapple, diced
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • Oil for frying
  • Powdered sugar for serving

Instructions

  1. Mix flour, baking powder, and sugar in a bowl.
  2. Add milk and vanilla, stirring until smooth.
  3. Fold in the diced pineapple until well coated.
  4. Heat oil in a frying pan over medium-high heat.
  5. Spoon the batter into the hot oil, cooking until golden brown, about 2-3 minutes per side.
  6. Drain on paper towels and serve warm with powdered sugar.

Notes

Let the batter rest for about 10 minutes before frying for a lighter fritter. Use a thermometer to achieve the ideal oil temperature at around 350°F.
