A vibrant and refreshing pasta salad with crisp vegetables and a zesty dressing, perfect for sunny days and backyard barbecues.

Ingredients

  • 2 cups rotini or penne pasta
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, chopped
  • 1/2 cup olives (optional)
  • 1/2 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the pasta according to package instructions until al dente.
  2. Drain the pasta and let it cool.
  3. Chop your vegetables into bite-sized pieces.
  4. Mix in the cooled pasta with the vegetables.
  5. Drizzle the dressing over the top.
  6. Toss everything gently to coat and combine.

Notes

Best served fresh, but leftovers can be stored in the fridge for up to three days. Add the dressing just before serving if making ahead.
