Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large fresh lemons (juiced and zested)
  • 2 large eggs
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend flour, sugar, and butter until the mixture is crumbly.
  3. Press half of the crumb mixture into a prepared baking pan.
  4. Whisk together lemon juice, zest, and eggs for the filling.
  5. Pour the lemon filling onto the crumb base.
  6. Sprinkle remaining crumble on top.
  7. Bake for 25-30 minutes until lightly golden.
  8. Cool completely before slicing into squares.
