Delightful lemon curd tartlets with a buttery crust and creamy, tangy filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Optional: almond flour for gluten-free crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cold butter into the flour until it resembles coarse crumbs.
  3. Press the mixture into tartlet pans.
  4. Bake until golden, about 15-20 minutes.
  5. Combine lemon juice, zest, sugar, and eggs in a saucepan over gentle heat.
  6. Stir continuously until thickened and smooth, about 8-10 minutes.
  7. Cool the tart shells before filling with lemon curd.
