A delicious and hearty bowl combining creamy potatoes with vibrant taco toppings, perfect for busy weeknights.

Ingredients

  • 4 large russet potatoes
  • 1 packet taco seasoning
  • 1 cup cooked protein (chicken, beef, or beans)
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup cheese, shredded (optional)
  • 1/2 cup sour cream (optional)
  • Tortilla chips for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) if baking the potatoes.
  2. Wash and pierce the potatoes with a fork.
