- 2 large potatoes
- 1 lb ground meat (beef, chicken, or turkey)
- 1 tsp taco seasoning
- 1 cup diced bell peppers
- 1 cup corn
- 1 cup black beans (rinsed and drained)
- 1 avocado, diced
- 1 cup shredded cheese
- Sour cream (for serving)
- Fresh cilantro (for garnish)
- Olive oil
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the potatoes into cubes, toss with olive oil, salt, and pepper, and spread evenly on a baking sheet.
- Roast for 25-30 minutes, or until crispy and golden.
- In a skillet, cook the ground meat over medium heat until browned. Add taco seasoning and stir well.
- In another bowl, mix the roasted potatoes, cooked meat, diced bell peppers, corn, and black beans.
- Top with diced avocado and shredded cheese.
- Serve with sour cream and garnish with fresh cilantro. Enjoy your meal!
