A vibrant and refreshing side dish that combines crunchy vegetables with the sweet brightness of ripe mangoes, perfect for summer barbecues.

Ingredients

  • 1 ripe mango, diced
  • 2 cups green cabbage, shredded
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup lime juice
  • 2 tbsp honey or agave syrup
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Start by shredding the cabbage finely.
  2. Dice your mango and bell peppers, then thinly slice the red onion.
  3. Whisk together the dressing ingredients in a separate bowl.
  4. Combine all the veggies and mango in a large mixing bowl.
  5. Pour the dressing over the vegetables and toss gently to mix.
  6. Chill in the fridge to let the flavors meld before serving.

Notes

For a vegan option, replace honey with agave syrup. Feel free to add diced jalapeƱos for extra spice or black beans for protein.
