A fresh, vibrant take on potato salad inspired by Mediterranean flavors, perfect for summer gatherings.

Ingredients

  • 1 lb new potatoes
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the new potatoes until tender and easily pierced with a fork.
  2. Cool the potatoes slightly before chopping them into bite-sized pieces.
  3. Combine the chopped potatoes with cherry tomatoes, bell peppers, parsley, and dill in a large bowl.
  4. Mix olive oil, lemon juice, and herbs in a separate bowl until well blended.
