A refreshing and hearty pasta salad combining the sweet crunch of corn, zesty lime, and creamy dressing, perfect for gatherings.

Ingredients

  • 2 cups elbow pasta
  • 2 cups fresh corn (grilled or roasted)
  • 1/2 cup creamy dressing (yogurt or mayonnaise)
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Boil the pasta until al dente, about 10 minutes.
  2. Prepare the corn by grilling or roasting until charred, then slice off the cob.
  3. Mix the cooked pasta with the corn, cilantro, and lime juice.
