Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Optional toppings: whipped cream, chocolate sauce, fresh berries

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the crushed graham crackers with melted butter until it resembles wet sand.
  3. Press the mixture firmly into the bottoms of mini muffin tins.
  4. Blend the cream cheese with sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the filling over the prepared crusts.
  7. Bake until set, about 20-25 minutes.
  8. Chill in the fridge for a few hours before serving.

Notes

For best texture, use room temperature cream cheese. Avoid overmixing to prevent cracks.
