Delightful and fluffy banana bread made with ripe bananas, perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (or substitute with applesauce for lower sugar)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Incorporate the eggs and sugar until well blended.
  4. Gradually fold in the flour, baking soda, and salt until just combined.
  5. Pour the batter into the prepared pan.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for a few minutes, then transfer to a wire rack.

Notes

For a lighter version, use unsweetened applesauce instead of butter and reduce sugar with natural sweeteners.
