A creamy, tropical No Bake Pineapple Cheesecake with a buttery graham cracker crust, perfect for warm evenings or gatherings.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup fresh pineapple, crushed
  • ½ cup sweetener of choice
  • Fresh pineapple chunks, for garnish

Instructions

  1. Crush the graham crackers and mix with melted butter until resembling wet sand.
  2. Press the mixture firmly into the bottom of a springform pan to form the crust.
  3. Beat the cream cheese until smooth in a bowl.
  4. Mix in the crushed pineapple and sweetener until well combined.
  5. Pour the creamy filling over the crust and smooth the top.
  6. Chill in the refrigerator for at least 240 minutes, or until firm enough to slice.

Notes

Consider adding a splash of lemon juice to the filling for extra brightness. Serve with fresh pineapple or whipped cream.
