A delicious combination of juicy chicken and vibrant pineapple, all nestled in fluffy rice, making it perfect for a weeknight dinner or family gathering.

Ingredients

  • 1 pound chicken, cut into pieces
  • 2 cups rice
  • 1 cup fresh pineapple, diced
  • 1 onion, chopped
  • 2 cups broth (chicken or vegetable)
  • 1 tablespoon soy sauce
  • Vegetables (bell peppers, peas, etc.)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Sauté the chicken in a skillet until golden brown.
