  • 1/2 cup vegetable oil
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/4 cup coconut milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Mix the dry ingredients: flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Combine the wet ingredients: oil, eggs, pineapple, and vanilla in another bowl.
