A delicious way to kickstart your day with perfectly poached eggs, creamy avocado, and silky smoked salmon.

Ingredients

  • 2 large eggs
  • 1 ripe avocado, sliced
  • 4 oz smoked salmon
  • Fresh dill or chives for garnish
  • Salt and pepper to taste
  • Water for poaching

Instructions

  1. Bring a pot of water to a gentle simmer.
  2. Crack the eggs into the simmering water and cook for 4-6 minutes for perfectly poached eggs.
  3. Slice the avocado and arrange it in bowls.
  4. Lay the smoked salmon on top of the avocado.
  5. Remove the poached eggs and place them over the salmon and avocado.
  6. Garnish with fresh dill or chives, and season with salt and pepper.

Notes

For perfectly poached eggs, consider adding a splash of vinegar to the water for better shape. Store leftovers separately to maintain freshness.
