A refreshing twist on the classic Italian dessert, this Raspberry Lemon Tiramisu combines vibrant raspberry flavor with zesty lemon, creating an irresistible combination.

Ingredients

  • 2 cups ripe raspberries
  • 2 fresh lemons (zest and juice)
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1 package ladyfingers (savoiardi)
  • 1/2 cup granulated sugar
  • Cocoa powder or crushed raspberries for garnish

Instructions

  1. Zest and juice the lemons, then whisk the zest and juice into the mascarpone.
  2. Fold in the whipped cream gently until combined.
  3. Dip ladyfingers in a raspberry mixture, being careful not to soak them too long.
  4. Layer soaked ladyfingers and mascarpone mixture in a dish.
  5. Finish with another layer of cream and dust with cocoa powder or crushed raspberries.
  6. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

Use the freshest raspberries for the best flavor. For a dairy-free version, substitute mascarpone with coconut cream.
