Delicious individual mini cheesecakes layered with fruity purees, perfect for celebrations.

Ingredients

  • 8 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1/2 cup strawberry or raspberry puree
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven and prepare a muffin tin with liners.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of each liner to form the crust.
  3. Bake until lightly golden, then let them cool completely.
  4. Whip together the cream cheese until smooth, then add sugar and eggs, mixing until well combined.
  5. Pour the filling over the cooled crust and bake until set.
  6. Let them cool thoroughly; chill for best flavor.

Notes

Use room temperature cream cheese for smooth mixing. Avoid overbaking; they should be slightly jiggly in the center.
