A bright and refreshing salad with crisp cucumbers, juicy tomatoes, and aromatic herbs, perfect for warm days.

Ingredients

  • 3 cups cucumbers, sliced
  • 2 cups ripe tomatoes, chopped
  • 1/4 cup fresh basil or parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (red wine or white)
  • Salt and pepper, to taste
  • Optional: Feta cheese or toasted nuts for garnish

Instructions

  1. Wash and slice your cucumbers and tomatoes.
  2. Combine them in a large bowl.
  3. Chop your herbs and add them in.
  4. Drizzle with olive oil and vinegar.
  5. Toss gently to combine.
  6. Allow to sit for a few minutes to enhance the flavors.
  7. Serve fresh or store the dressing separately if keeping for later.
