A delicious Rhubarb Crisp that balances tart rhubarb and a crunchy, buttery topping, perfect for any occasion.

Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar (or coconut sugar/maple syrup)
  • 1 teaspoon cinnamon
  • 1 cup oats
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the chopped rhubarb with sugar and cinnamon in a bowl.
  3. Combine oats, flour, and brown sugar in another bowl.
  4. Add the cold butter into the dry mixture and mix until crumbly.
  5. Layer the rhubarb mixture in a baking dish.
  6. Sprinkle the crisp topping evenly over the rhubarb.
  7. Bake for 30-40 minutes or until the topping is golden and the rhubarb is bubbling.
