A vibrant and satisfying taco salad featuring crunchy Doritos, savory seasonings, and fresh vegetables, perfect for weeknight dinners or casual gatherings.

Ingredients

  • 4 cups fresh greens (romaine or mixed leafy blend)
  • 1 lb lean ground beef or vegetarian substitute
  • 1 can black beans, rinsed and drained
  • 2 cups cherry tomatoes, halved
  • 1 cup shredded cheese
  • 2 cups Doritos, plus extra for topping
  • 1/2 cup Greek yogurt or sour cream
  • 1 packet taco seasoning
  • Chopped cilantro and sliced jalapeƱos for garnish (optional)

Instructions

  1. Prepare the salad base by tossing fresh greens in a large bowl.
  2. Brown the ground beef or vegetarian substitute in a pan, seasoning with taco seasoning.
  3. Mix the cooked protein with the beans and tomatoes in the salad bowl.
  4. Add the Doritos, reserving some for topping.
  5. Drizzle the Greek yogurt or sour cream on top.
  6. Toss gently to combine, being careful not to crush the chips.

Notes

For a lighter option, use Greek yogurt instead of sour cream. To keep leftovers fresh, store in an airtight container, keeping chips separate.
