A deliciously sweet spread transforming tart rhubarb into a creamy delight, perfect for brunch or toast.

Ingredients

  • 4 cups fresh rhubarb, chopped
  • 1 cup sugar or sweetener of your choice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Wash and chop your fresh rhubarb into small pieces.
  2. Place the pieces in a saucepan over medium heat, adding your chosen sweetener and spices.
  3. Stir occasionally as the rhubarb softens and releases juices.
  4. Blend the mixture until smooth once the rhubarb is syrupy.
  5. Return the blended mixture to the stove and simmer until thickened.
