A delightful treat capturing the essence of summer with sweet peaches, perfect for breakfast, snacks, or dessert.

Ingredients

  • 2 cups fresh peaches, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sugar until fluffy.
  3. Add the eggs and mix until well incorporated.
  4. Fold in the mashed peaches.
  5. Combine the dry ingredients in a separate bowl.
  6. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  7. Pour the batter into a prepared loaf pan.
  8. Bake for about 60 minutes, or until a toothpick comes out clean.

Notes

For added flavor, consider mixing in nuts or spices. Frozen peaches can be used if fresh are unavailable; just make sure to thaw and drain them well.
