Light and refreshing cheesecake bars ideal for spring, featuring a creamy filling and buttery crust.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • Zest of 1 lemon (optional)
  • Fresh fruit for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Combine the graham cracker crumbs and melted butter in a bowl, pressing firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes or until golden, then let it cool slightly.
  4. Whip together the cream cheese and sugar until light and fluffy.
  5. Add the eggs and lemon zest, mixing until well incorporated.
  6. Pour the filling over the cooled crust, smoothing it out evenly.
  7. Bake for 25-30 minutes, or until just set.
  8. Cool completely before slicing into bars and serving chilled.
