Ingredients

  • 1 standing rib roast (about 5-7 pounds)
  • Salt and pepper to taste
  • Fresh rosemary
  • Fresh thyme
  • 4 cloves of garlic, minced

Instructions

  1. Allow the standing rib roast to rest at room temperature for 1-2 hours before cooking.
  2. Season generously with salt, pepper, rosemary, thyme, and minced garlic.
  3. Preheat the oven to 325°F (163°C).
  4. Roast the meat at low heat until its internal temperature reaches about 130°F (54°C) for medium-rare.
  5. Increase the oven temperature to 450°F (232°C) for the last 20-30 minutes to develop a crust.
  6. Let the roast rest for at least 20 minutes before slicing to retain juices.
