A vibrant and refreshing pasta salad featuring grilled corn, colorful vegetables, and a zesty dressing, perfect for summer gatherings.

Ingredients

  • 8 ounces pasta
  • 2 ears of fresh corn
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. Grill the corn until charred, about 10 minutes.
  3. Cool the pasta and corn slightly.
  4. Combine the pasta, grilled corn, diced veggies, and dressing in a large mixing bowl.
  5. Toss gently until everything is evenly coated.
  6. Adjust seasoning to taste before serving.

Notes

Serve chilled or at room temperature. Adds crumbled cheese or extra fresh herbs for garnishing.
