A delightful twist on traditional pasta dishes featuring sweet corn, creamy dressing, and zesty lime, perfect for summer gatherings.

Ingredients

  • 2 cups pasta (fusilli or rotini)
  • 2 ears fresh corn, grilled
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup fresh herbs (cilantro or parsley)
  • 1/2 cup creamy dressing (yogurt or mayonnaise)
  • Feta cheese (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. Grill the corn for 5-7 minutes, rotating until nicely charred.
  3. Drain and rinse the cooked pasta under cold water to cool.
  4. Combine the cooled pasta, corn, diced bell peppers, red onion, and fresh herbs in a large bowl.
  5. Drizzle generously with dressing and mix until well coated.
