Ingredients

  • 8 oz pasta (your choice)
  • 2 cups fresh corn (or frozen)
  • 1/2 cup mayonnaise
  • 2 tbsp lime juice
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Boil the pasta according to package instructions until al dente.
  2. Drain the pasta and cool it under cold water to stop the cooking process.
