A delightful Vietnamese dish featuring marinated chicken grilled to juicy perfection, combining savory and sweet notes for a flavorful experience.

Ingredients

  • 2 chicken breasts or thighs
  • 3 cloves garlic, minced
  • 1 stalk lemongrass, finely chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • Fresh herbs (cilantro or mint) for garnish

Instructions

  1. Combine garlic, lemongrass, fish sauce, brown sugar, soy sauce, pepper, and oil in a bowl to create a marinade.
  2. Marinate chicken in the mixture for at least 30 minutes, or longer for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Grill chicken for 6-8 minutes on each side until juices run clear.
  5. Rest the chicken for a few minutes before slicing.
  6. Serve garnished with fresh herbs over jasmine rice or alongside spring rolls.

Notes

For added spice, include chili flakes in the marinade. Use lime zest if lemongrass is unavailable.
