A fragrant and zesty dish that brings the flavors of Vietnam to your kitchen, perfect for weeknight dinners or entertaining.

Ingredients

  • 2 stalks fresh lemongrass, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons cooking oil (or tamari for gluten-free)
  • 4 chicken thighs, boneless and skinless
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Sliced cucumbers, for serving
  • Roasted peanuts, for garnish
  • Jasmine rice or vermicelli noodles, for serving

Instructions

  1. Combine lemongrass, garlic, ginger, and oil to create the marinade.
  2. Coat the chicken thoroughly with the marinade and let it rest for at least 30 minutes.
  3. Heat a pan over medium-high heat and add the marinated chicken.
  4. Cook until the chicken is beautifully browned and cooked through.
  5. Serve over jasmine rice or with vermicelli noodles, garnished with cilantro, cucumbers, and peanuts.

Notes

For best flavor, marinate the chicken overnight. Avoid overcrowding the pan for even cooking.
