A fragrant dish featuring tender chicken marinated in a zesty blend of lemongrass, garlic, and spices, perfect for a quick and satisfying weeknight dinner.

Ingredients

  • 2 chicken thighs or breasts
  • 2 stalks of fresh lemongrass, finely minced
  • 4 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Jasmine rice, for serving
  • Fresh cilantro or scallions, for garnish

Instructions

  1. Marinate the chicken in a mixture of lemongrass, garlic, soy sauce, and spices for at least 30 minutes.
  2. Heat a pan over medium heat and add vegetable oil.
  3. Cook the chicken until golden brown on the outside and tender on the inside, checking for doneness.
  4. Serve over jasmine rice and garnish with cilantro or scallions.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh. Best enjoyed fresh, but leftovers can be stored in an airtight container for up to three days.
