A refreshing watermelon sorbet that brightens any hot day, perfect for summer gatherings and a light dessert.

Ingredients

  • 1 ripe watermelon
  • 1/2 cup sugar (or sugar substitute)
  • 1 tablespoon lemon juice

Instructions

  1. Cut the watermelon into chunks and remove any seeds.
  2. Blend it in a food processor until it’s completely smooth.
  3. Taste the purée, and add sugar in small increments until desired sweetness is reached.
  4. Add a splash of lemon juice to brighten the flavor.
  5. Pour the mixture into a shallow dish and freeze for about two hours, stirring every 30 minutes.

Notes

For the best results, use a really ripe watermelon. Stirring during the freezing process prevents ice crystals from forming.
