Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and diced
  • ¼ cup granulated sugar
  • 6 fresh apricots, pitted and sliced (or canned/frozen apricots)
  • ¼ cup granulated sugar (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Mix the flour and sugar in a bowl.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press this mixture into a tart pan and chill briefly.
  4. Pre-bake the crust until golden.
  5. Simmer the apricots with a bit of sugar until tender, then blend until smooth.
  6. Pour the filling into the crust and bake until set and golden.
  7. Let it cool slightly before serving.

Notes

For best results, let the crust chill before baking. Check for doneness by gently shaking; the filling should be slightly set but not jiggly.
