Ingredients

  • 1 cup fresh blueberries (or frozen, tossed in flour)
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream the butter and sugar together until fluffy.
  3. Mix in the eggs, one at a time.
  4. Combine the dry ingredients (flour, baking powder, baking soda, and salt) in a separate bowl.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the lemon juice and zest.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for about 50-60 minutes, until a toothpick inserted comes out clean.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
