Soft, chewy cookies filled with gooey caramel and infused with the warm flavors of brown sugar and cinnamon.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour (or gluten-free blend)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup caramel candies, unwrapped

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Gradually incorporate the flour, baking soda, salt, and cinnamon until well combined.
  5. Scoop portions of dough and encase a piece of caramel in each ball.
  6. Bake for 10-12 minutes, or until the edges are golden but the centers remain soft.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

Store in an airtight container at room temperature for up to a week or freeze the unbaked dough for longer storage.
