- 1 cup butter, softened
- 1 cup brown sugar
- 2 large eggs
- 2 cups all-purpose flour (or gluten-free blend)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup caramel candies, unwrapped
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing thoroughly after each addition.
- Gradually incorporate the flour, baking soda, salt, and cinnamon until well combined.
- Scoop portions of dough and encase a piece of caramel in each ball.
- Bake for 10-12 minutes, or until the edges are golden but the centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
