A spicy, creamy take on the classic sloppy joe, featuring ground chicken and a rich cheddar cheese sauce.

Ingredients

  • 1 lb ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 2 tbsp Cajun seasoning
  • 2 tbsp butter
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 brioche buns
  • Chopped green onions for garnish
  • Lemon wedges for serving

Instructions

  1. Heat a large skillet over medium heat.
  2. Brown the ground chicken in a single layer, breaking it up as it cooks.
  3. Add the onion, garlic, and bell pepper; sauté until soft and translucent, about 5 minutes.
  4. Stir in the diced tomatoes and Cajun seasoning; simmer until the mixture thickens.
  5. Melt butter in a separate pot over medium-low heat.
  6. Add cream and shredded cheddar, stirring constantly until smooth to create the cheese sauce.
  7. Toast the brioche buns until golden.
  8. Assemble each sandwich with the chicken mixture and spoon over the cheddar sauce.
  9. Garnish with green onions or a squeeze of lemon.

Notes

For a spicier version, swap cheddar for pepper jack and add jalapeños. For a vegetarian option, replace chicken with cooked lentils or tempeh.
