Instructions
- Heat a large skillet over medium heat.
- Brown the ground chicken in a single layer, breaking it up as it cooks.
- Add the onion, garlic, and bell pepper; sauté until soft and translucent, about 5 minutes.
- Stir in the diced tomatoes and Cajun seasoning; simmer until the mixture thickens.
- Melt butter in a separate pot over medium-low heat.
- Add cream and shredded cheddar, stirring constantly until smooth to create the cheese sauce.
- Toast the brioche buns until golden.
- Assemble each sandwich with the chicken mixture and spoon over the cheddar sauce.
- Garnish with green onions or a squeeze of lemon.
Notes
For a spicier version, swap cheddar for pepper jack and add jalapeños. For a vegetarian option, replace chicken with cooked lentils or tempeh.
